Spontaneous Cookies

For those moments when you need some sugar and are feeling a wee bit creative…

… These were adapted from The Little Loaf’s Oaty-Chocolate-Chip Cookies.  I kinda followed the basic mixture and then added whatever was in the cupboard that seemed like it would work!

Ingredients:

100g oats (I used a mixture of porridge oats and milled oats)

125g whole meal plain flour

50g raisins

50g Crushed Amaretti biscuits

1 teaspoon baking powder

75g caster sugar

80g butter/olive oil spread

1 egg

Steps:

  1. Grease a baking tray, pre heat oven to 180˚C
  2. Combine dry ingredients
  3. Beat the butter and sugar together, and then beat in the egg
  4. Add the dry to the wet ingredients (It will be pretty wet, but you can add more flour if it’s really sticky)
  5. Scoop golf ball sized pieces of dough out of your ball and roll and place on the tray, pressing down slightly to form a fat disc.
  6. Put in the oven for 13-15 minutes until just browning at the sides, and then remove, boil the kettle and eat!
